"Super" Jalapeno Poppers

  2. 12 jalapeno peppers
4 ripe avocados
  3. 1 Tbsp honey
  4. 1/2 cup sundried tomatoes
  1. Preheat oven to
  2. Wash and core jalapenos, removing all seeds (unless you really like heat!!).
  3. Mash the avocados in a small mixing bowl.
  4. Chop the sundried tomatoes into pea-sized pieces (a food processor works great for this).
  5. Add honey and chopped sundried tomatoes to the mashed avocado and mix well.
  6. Stuff the jalapenos with the "gooey green goodness".
  7. Wrap each pepper in a strip of bacon.
  8. Place in a baking dish and bake
