Rice Ingredients
  1. 2 C Chopped Parsnips
  2. 2 Carrots
  3. 1/2 C cashews
Stir Fry Ingredients
  1. 1 C Broccoli, Chopped
  2. 1 package Mushrooms, sliced
Sauce Ingredients
  1. 1/4 C Olive Oil
  2. 1/3 C Sun dried Tomatoes (soft)
  3. 1 t. red pepper
  4. 1 1/2 t. Curry Powder
  5. 1 T soy sauce
Notes
  1. Finely chop parsnips, carrots, and nuts and place in bowl. If you are using a food processor to do
this, you will want to do each separately. Combine with chopped broccoli and sliced mushrooms or any other veggies you have in your fridge.
  2. Combine all sauce ingredients in food processor.  Toss everything together and serve.
