- 1 c chopped onion
- 2-3lb squash
- 4-6 c chicken broth
- 1 apple peeled/cored and diced
- 1-2 cans coconut milk
- Cook everything except coconut milk together in a stock pot until tender.
- Mash with potato masher to leave bulk in texture.
- Add 1-2 cans coconut milk and cayenne to taste.
