Raw Thin Mint Brownie Bites

Ingredients
- 1 c walnuts (120g)
- 1 and 1/3 cups pitted dates (230 grams) (If you want a sweeter result, up the proportion of dates.)
- 1 tsp vanilla extract
- 4T tablespoons cocoa powder (or 3-6 depending on how chocolate-y you want them to be)
- Pure peppermint extract, start with 1/8 teaspoon, then add more to taste (everyone at Lakeshore likes ΒΌ t)
- dash of salt
Instructions
- Chop/blend all the ingredients, using a food processor, Magic Bullet, etc. (No need to blend the dates first; just blend everything all at once.)
- Form into small bite-sized balls and enjoy!
