Raw Fajita Veggies Ingredients
  1. 2 package mushrooms sliced
  2. 6 bell peppers, sliced into strips
  3. 2 zucchini, sliced into sticks
  4. 2 red onion, thinly sliced
  5. 4 cloves garlic, minced
  6. 1/2 cup Braggs Aminos
  7. 1/2 cup extra virgin olive oil
  8. 4 tablespoons chili powder
  9. 2 teaspoon cumin
  10. 1/8 - 1/4 teaspoon cayenne
Salsa Ingredients
  1. 5-6 tomatoes, quartered
  2. 1 red bell pepper
  3. 1 green bell pepper
  4. 1 jalapeno, optional
  5. Squeeze of fresh lemon juice
  6. Sea salt, to taste
  7. Handful cilantro leaves, chopped
Cheddar Sauce Ingredients
  1. 1 large red bell pepper
  2. 2-3 tablespoons water
  3. 1 cup cashews
  4. 3 tablespoons nutritional yeast
  5. 1 tablespoon tahini
  6. 2 teaspoon onion powder
  7. 1 1/4 teaspoon sea salt
  8. 1 large clove garlic
  9. 2 tablespoons lemon juice
  10. 1 head iceberg lettuce
Instructions
  1. Toss all Fajita ingredients in a large bowl and marinade for 1-12 hours
  2. Pulse salsa in food processor until blended but chunky
  3. Blend Cheddar sauce in food processor until creamy
