Raw Fajita Veggies Ingredients
- 2 package mushrooms sliced
- 6 bell peppers, sliced into strips
- 2 zucchini, sliced into sticks
- 2 red onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup Braggs Aminos
- 1/2 cup extra virgin olive oil
- 4 tablespoons chili powder
- 2 teaspoon cumin
- 1/8 - 1/4 teaspoon cayenne
Salsa Ingredients
- 5-6 tomatoes, quartered
- 1 red bell pepper
- 1 green bell pepper
- 1 jalapeno, optional
- Squeeze of fresh lemon juice
- Sea salt, to taste
- Handful cilantro leaves, chopped
Cheddar Sauce Ingredients
- 1 large red bell pepper
- 2-3 tablespoons water
- 1 cup cashews
- 3 tablespoons nutritional yeast
- 1 tablespoon tahini
- 2 teaspoon onion powder
- 1 1/4 teaspoon sea salt
- 1 large clove garlic
- 2 tablespoons lemon juice
- 1 head iceberg lettuce
Instructions
- Toss all Fajita ingredients in a large bowl and marinade for 1-12 hours
- Pulse salsa in food processor until blended but chunky
- Blend Cheddar sauce in food processor until creamy
