Puerto Rican Beef

  1. 1 pound ground beef
  2. ½ each green, red and yellow bell pepper, sliced
  3. 1 white onion, sliced
  4. ½ T. ground cumin
  5. 1 t. ground coriander
  6. ½ T. turmeric powder
  7. 1 T. dried oregano
  8. Sea salt and black pepper to taste
  9. 1 bunch Kale or spinach, chopped
  10. ½ cup pimento-stuffed green olives
  11. 3 sweet potatoes
  12. 1 ripe avocado
  1. Peel and quarter sweet potatoes then boil for 20-25 minutes or until fork tender. Drain and mash.
  2. In a large skillet brown the ground beef
  3. Add the bell peppers and onions and sauté until onions and peppers are tender
  4. Add all the spices and mix well
  5. Add kale and green olives, stirring often until the kale is tender (about 4-5 minutes).
  6. Serve over mashed sweet potatoes with a side of sliced avocado.
