Peach Pie

Crust Crust
- 1 ¾ c almonds pinch of salt
- 1 tsp cinnamon pinch of nutmeg
- 4 dates
- 2 Tbsp honey
- 1 or 2 Tbsp coconut oil
Filling Ingredients
- 4 peaches, sliced pinch of salt pinch of nutmeg
- 1 tsp cinnamon
- 1 Tbsp coconut flakes
- 4 dates
- 1 Tbsp honey mint or lemon balm, for garnishing
Instructions
- Finely chop the almonds in food processor.
- Add the rest of the crust ingredients and mix thoroughly.
- Spread the dough out evenly on the bottom of a pie dish
- Put 2 peaches in a food processor.
- When they are finely chopped, add the rest of the filling ingredients, except for the last 2 peaches.
- Blend thoroughly and remove from food processor.
- Put the remaining 2 sliced peaches in the filling mixture.
- Stir by hand. Pour the filling into the pie dish.
- Garnish with fresh mint or lemon balm.
