Peach Pie

Crust Crust
  1. 1 ¾ c almonds
pinch of salt
  2. 1 tsp cinnamon
pinch of nutmeg
  3. 4 dates
  4. 2 Tbsp honey
  5. 1 or 2 Tbsp coconut oil
Filling Ingredients
  1. 4 peaches, sliced
pinch of salt
pinch of nutmeg
  2. 1 tsp cinnamon
  3. 1 Tbsp coconut flakes
  4. 4 dates
  5. 1 Tbsp honey
mint or lemon balm, for garnishing
  1. Finely chop the almonds in food processor.
  2. Add the rest of the crust ingredients and mix thoroughly.
  3. Spread the dough out evenly on the bottom of a pie dish
  4. Put 2 peaches in a food processor.
  5. When they are finely chopped, add the rest of the filling ingredients, except for the last 2 peaches.
  6. Blend thoroughly and remove from food processor.
  7. Put the remaining 2 sliced peaches in the filling mixture.
  8. Stir by hand. Pour the filling into the pie dish.
  9. Garnish with fresh mint or lemon balm.
