Fettuccini Ingredients
  1. 6-8 yellow zucchinis
Mushroom Alfredo Sauce Ingredients
  1. 1 C mushrooms
  2. ¾ C cashews
  3. ¾-1 C water
  4. 1 T olive oil
  5. 2 T lemon juice
  6. Salt and pepper (to taste)
Instructions
  1. With a vegetable peeler, peel off thin long strands of the zucchinis. Set aside.
  2. Process everything for the mushroom sauce in the food processor.
  3. Add the sauce to the pasta.
  4. Toss well and let sit for ½ hour before serving.
