Fettuccini Ingredients
- 6-8 yellow zucchinis
Mushroom Alfredo Sauce Ingredients
- 1 C mushrooms
- ¾ C cashews
- ¾-1 C water
- 1 T olive oil
- 2 T lemon juice
- Salt and pepper (to taste)
Instructions
- With a vegetable peeler, peel off thin long strands of the zucchinis. Set aside.
- Process everything for the mushroom sauce in the food processor.
- Add the sauce to the pasta.
- Toss well and let sit for ½ hour before serving.
