Not-So Cheese Sauce
Time: 8 minutes
Yield: 4 cups (720 ml)
Speed: Variable to High
Ingredients:
1 cup (240 ml) water
2 tablespoons (30 ml) lemon juice
1/4 cup (50 g) canned pimientos or 1 large roasted red pepper, peeled
1/2 cup (70 g) raw cashews or almonds
1 teaspoon onion powder
1/4 cup (30 g) nutritional yeast or 2 tablespoons (25 g) baking yeast
2 teaspoons salt
1 ½ cups (360 ml) boiling water
2 tablespoons (20 g) potato starch mixed with 1/4 cup (60 ml) cold water
optional - Spicy seasoning to taste - I've used Cajun and red pepper because I like it HOT!
Directions:
1. Place all ingredients, except the boiling water and potato starch
mixture, into the Vita-Mix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and quickly increase speed to Variable 10, then to High.
4. Blend for 6-7 minutes or until heavy steam escapes from the vented lid.
5. Reduce speed to Variable 7 and remove lid plug. Pour boiling water and potato starch mixture through lid opening.
6. Continue to blend until mixture is thickened, about 1 minute.

If you’d like to drop some dairy from your diet, but cheese sauce makes
veggies more enjoyable for the kids, this unique (and low fat) sauce is
the answer! The ingredients will surprise you, but the taste is out of
this world—thanks to the Vita-Mix 5200. The whole family will love it
over broccoli, cauliflower, whole wheat noodles or even as a dip.
