Chicken Red Curry
Ingredients
2 chicken breasts cut into thin bite sized strips
1 onion, chopped
2 t. minced garlic
2 t. ginger
½ jar Thai red curry paste
2 zucchini, chopped
1 can coconut milk
1 T. lime juice
1 T. sugar
3 T. fish sauce
1 can great northern beans
Chopped cilantro (optional)
Instructions
-Cut chicken and sear in a skillet with salt and pepper, set
aside.
-Add olive oil to a skillet and sautee onion, garlic and
ginger for 2 minutes
-Add everything else except zucchini and cook 30 minutes over
low heat.
-In a separate saucepan, heat 1 can of great northern beans
over low heat
-Add zucchini and cook 10 minutes
-Garnish with cilantro and serve over beans (great northern beans are great!)
Tips:
For a spicier dish, add more curry paste. You can also add basil, water chestnuts, potatoes or fresh green beans to make it a little different.
They do not sell Red Curry Paste or Fish Sauce at WalMart but
it can be picked up at Kroger or other grocery stores.
