Shepard’s Pie

1 ½ cups frozen peas

1 cup chopped carrots

1 large onion

2 stalks celery, chopped

1 lb ground beef

1 t. garlic

1 cup beef broth

1 can diced tomatoes

1 t. Thyme, Rosemary and Worcestershire

Salt and pepper

Mashed Potato Topping:

6 cups chopped potatoes

2 t. garlic

1/3 cup almond milk

Salt, pepper, paprika

Instructions

Preheat oven to 400

-Quarter potatoes and put in large pot, cover with water with a dash of salt. Boil uncovered 15 minutes or until soft enough to mash

-Sautee onion, garlic, celery and carrots in a skillet for 5 minutes. Add beef to the skillet and brown it. Stir in everything else (not mashed potato topping ingredients) and simmer 5 minutes. Set Aside.

-Drain potatoes, mash adding all ingredients. Place beef mixture into large casserole dish and top by evenly spreading potato topping, sprinkle with paprika as garnish and bake 20 minutes.
