Shopska Salad

Ingredients:

3 bell peppers (ideally one of each color)

2 medium tomatoes

1 large or 2 small cucumbers

1T fresh basil

2T olive oil

2T balsamic vinegar 

Fresh ground Pepper and Salt to taste

Preparation:

 Dice all vegetables into bite size pieces.  Mix in a large bowl with olive oil, vinegar, and basil.  Serve chilled.

Modifications:

According to taste, you can add yellow, red or green onions, artichoke hearts, feta cheese, or any other vegetable to your liking.
