  1. 2 t. dried ancho chilis
  2. 2 red chili peppers, dried
  3. 1/2 cup olive oil
  4. 1 lb beef (chuck, tenderloin or stew meat) cubed
  5. 1 T. cumin
  6. 1 t. garlic powder
  7. 1 t. cayenne pepper
  8. 2 chipolte peppers in adobo sauce (this is in the aisle with the mexican food and comes in a can)
  9. 1 lb ground beef
  10. 1 large onion, chopped
  11. 1/2 cup beef stock
  12. 28 oz can of crushed tomatoes
  13. 28 oz can of whole tomatoes
  14. 1 small can tomato paste
  15. 2 bell peppers, chopped
  1. Place dried red peppers in a bowl of hot water to soak for at least 30 minutes. Drain
  2. Add some olive oil into large pot and get it good and hot. Take cubed meat and brown in pot on all sides. Remove browned cubes from pot and set aside. Do the same for the ground beef and set aside.
  3. Combine 1/4 cup olive oil, cumin seeds, garlic powder, cayenne powder and chipotle peppers in food processor and process for 30 seconds to 1 minute
  4. Toss spice/seasoned paste with the cubed and ground beef then put all ingredients in a crockpot and cook on low for 8 hrs.
