- 2 cans chickpeas, rinsed and drained
- 1 red bell pepper, thinly diced
- 1 green bell pepper, thinly diced
- 1 carrot, thinly diced
- 1 cup dried cranberries
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic
- 1 teaspoon cumin
- 1 teaspoon black pepper (or to taste)
- 1 teaspoon sea salt (or to taste)
- Place all beans, vegetables and cranberries in large salad bowl.
- Toss with olive oil, vinegar and seasonings.
- Mix well to coat.
