Broccoli Salad Stuffed Avocados

Broccoli Salad Ingredients
  1. 3 Avocado
  2. 1 head of Broccoli
  3. 1 cup Celery, diced
  4. 2 Red bell pepper
Curry Mayo Ingredients
  1. 1 egg at room temp
  2. 2T lemon juice at room temp (usually 1 lemon)
  3. 1 1/4 cup light tasting Olive Oil (not extra virgin)
  4. 1 t mustard (or more to taste)
  5. 1 t sea salt
  6. 1/3 t cayenne pepper
  7. 2 t basil
  8. 1 t turmeric
  9. 1 t curry powder
  1. In a large bowl mix eggs and lemon with hand mixer, then add ┬╝ cup olive oil. Add the remaining cup of oil in a VERY SLOW thin drizzle while continuing to mix. Be patient. If added to quickly, it will turn out runny. This will take several minutes. After a thick consistency is reached add rest of ingredients.
  2. Slice avocados in half, remove pit and set aside. Combine ingredients with mayo then spoon into avocado halves.  This recipe can be made with any leftover veggies you have left in your refrigerator. You can also put the broccoli salad into a dish and put slices of avocado on top for easier eating.
